Pojer e Sandri Quince Vinegar
Pojer e Sandri’s single-fruit vinegars—made solely with fruit juice—not wine vinegar infused with fruit flavors and essences—are elegant with a pleasing pucker.
This vinegar starts with the best locally-grown quince from Pojer e Sandri's own estate and neighboring orchards. The fruit is gently pressed and inoculated with yeast to ferment. When the fermented fruit juice achieves the right sugar content, it is transferred to oak barrels with some “mother” vinegar—a process known as the trucciolo lento method—and aged for 18 to 24 months.
The result? A balanced, delicate vinegar that captures the true essence of quince fruit with a sharp, but not overwhelming bite.
