But enthusiasm for canned food started to increase gradually. In José Gourmet's Codfish in Olive Oil and Garlic, the cod they use to prepare their cans, caught in the North East Atlantic, is paired with olive oil and garlic, thus preserving the traditional combination of this Portuguese dish.
