That’s due in part to the way it is produced; unlike other Champagne vinegars this one never undergoes pasteurization. By eliminating this step the vinegar possesses a lively, rich base. Try it in homemade mayonnaise – or makes a perfect dressing with almost any of our oils. Imported from the Champagne region of France.
